An enzyme that breaks down a substance by binding water molecules to specific bonds is called a hydrolytic enzyme. For example, protease, sucrase, phosphatase, esterase, lipase, carbohydrase, nuclease, pepsin, invertase, urease, amylase, maltase, trypsin etc.
