Lichens are used as human food due to the sugar called ‘lichenin’. Cetraria islandica in Norway, Sweden and Iceland, Evernia prunastri in Egypt, Parmelia sulcata in India and Endocarpon miniatum (stone mushroom) in China and Japan are used as human food.
